Potato Casserole

  • 8 medium potatoes
  • 1 cup cream of mushroom soup
  • 1/3 cup chopped green onions
  • 1/4 cup butter
  • 1 pint sour cream
  • 1 1/2 cup grated cheese

Cook potatoes; cool and grate. Heat butter with soup; blend in sour cream, onion and cheese. Stir in potatoes. Place in greased casserole dish. Top with topping (combine 1 cup Rice Krispies or crushed corn flakes and 2 TB melted butter). Bake uncovered for 45 minutes at 350 degrees. (Even better reheated the next day!)
