The Great Kimchi Expedition

Kimchi v1

  • Mostly failure: cannot use typical red chili pepper flakes... Or at least 1/2 TBS worth. Cause its much too spicy! Also I pounded the cabbage too much and it lost some of its crispness. So by the time it has fermented, it would have been nice to have it less pounded to begin with. Maybe instead add water. Should experiment with shimp paste and apple juice/mash. Also I think sugar is important to sweeten it all up a bit.
  • 1 napa cabbage torn into bite size chunks
  • 1 grated carrot
  • 1/2 cup of grated daikon
  • 3 scallions cut into 1 inch pieces
  • 2 cloves of garlic, finely grated
  • 1 inch of ginger, finely grated
  • 2 TS fish oil
  • 1 TBS sea salt (must be free of iodine)
  • 1 1/2 TBS red chili pepper flakes
  • 3 TBS whey (strained Fage yogurt)

Mix everything into a bowl and then pound it with a meat hammer.

Kimchi v2

  • Success: The blended red bell pepper is definitely major secret I've uncovered. Could have 2 TB more water so it can all be submerged. The special gochugaru flakes are utterly essential and add a certain smoky flavor. 4 days of fermentation on the counter. Not sure the pom juice is adding anything.’’
  • 1 cabbage (hand torn into bite size pieces)
  • 1 1/2 cups of grated carrots
  • 2 TBS korean red pepper flakes (gochugaru)
  • 2 TS fish oil
  • 1 TS Fage yogurt (not strained this time)
  • 1 TBS pomegranate juice
  • 1 TBS rock salt (no iodine!)
  • 1/2 Apple (blended)
  • 1 red bell pepper (blended)
  • 1 garlic (pressed and blended)
  • 1 inch of ginger (pressed and blended)
  • 8 TBS water (add once in final jars)

Kimchi v3

  • Success: I'm not digging the extra garlic clove. Also kimchi really need the fish oil to give it some depth. Also the 1TBS of yogurt instead of 1TS, well that made it ferment a bit too fast! But overall its a pretty tasty batch.
